-1 red chilli, finely chopped
-2 lemongrass stalks, tender inside white part only, sliced
-2 cloves garlic, chopped
-1 teaspoon coriander seeds, lightly toasted and crushed
-1 teaspoon ground turmeric
-1 tablespoon vegetable oil
-600ml/1 pint vegetable or chicken stock
-425ml/14fl oz coconut milk
-400g/14oz cooked chicken or prawn (shrimp)
-2 tablespoons fish sauce
-Juice of 1 lime
-1 tablespoon light brown sugar
-3 shallots, finely sliced
-200g/7oz vermicelli or thin glass noodles
-200g/7oz bean sprouts
-Handful of fresh coriander leaves


1. Heat the vegetable oil in a large saucepan over a medium heat.

2. Add in the garlic, lemongrass, chilli, coriander seeds and turmeric, and fry for about 1 minute.

3. Add the stock, coconut milk, cooked chicken or prawns, fish sauce, lime juice and sugar. Bring to the boil, reduce the heat and simmer for 10 minutes.

4. Meanwhile, cook the vermicelli or glass noodles in boiling water for about 4 minutes, until just cooked.

5. Drain the noodles and add them to the pan.

6. Add in the shallots and bean sprouts, and cook for 3-4 minutes.

7. Garnish with the coriander leaves and serve.
