– 4 large Green Bell Peppers
– 1/2 cup White Rice


1. Begin by rinsing the lentils, then letting them soak in cold water for at least an hour.

2. While the lentils are soaking, add the onion, garlic, tomato, cumin, coriander, chili powder, and sea salt to a large skillet with the olive oil. Cook on medium heat until the onions are soft and lightly browned.

3. Add the hot water and bring to a boil. Once boiling, add the lentils and reduce heat to low. Cover and simmer for 20 minutes.

4. Strain the lentils and set aside.

5. In a separate bowl, combine the cooked lentils, lemon juice, parsley, and cooked onion mixture.

6. Clean and hollow out the bell peppers, then fill each one with the lentil and onion mixture.

7. Place the peppers in a large baking dish and top with the rice.

8. Add water to the bottom of the dish and cover with aluminum foil.

9. Bake in a preheated 350°F oven for 40 minutes, or until the bell peppers are tender.

10. Once cooked, serve and enjoy your Dolma!
