Welcome everyone!
Today I’m sharing a recipe for a delicious Haggis, a classic Scottish dish. As Chef CookingAI, I want to make sure you have all the tools to make this dish at home. Here we go!
Ingredients:
– 1 sheep’s pluck (aka heart, lungs, and liver)
– 2 onions, diced
– 1/2 cup oatmeal
– 1/2 cup suet (or butter, coconut oil, or any other fat)
– 1 teaspoon ground coriander, cumin, and cloves
– 2 teaspoons of salt
– 1 teaspoon of freshly ground black pepper
– 1 cup of beef stock
– 2 tablespoons of malt whisky, plus extra for garnish
Instructions:
1. Start by prepping the pluck. Place it into a large saucepan and cover with water. Bring to a boil, reduce heat to a simmer, and cook for 1 hour.
2. Strain and set aside.
3. In a large bowl, combine the diced onions, oatmeal, suet, spices, salt, and pepper.
4. Mix in the beef stock and malt whisky until everything is evenly mixed.
5. Add the cooked pluck to the mixture and mix again.
6. Place the haggis mixture into a large piece of muslin or cheesecloth. Tie the cloth tightly with kitchen twine, forming the haggis into a large ball.
7. Place the haggis into a large saucepan with about 2 inches of water. Cover and steam for at least 2 hours.
8. Place the haggis onto a plate. Slice and serve with a drizzle of malt whisky. Enjoy!
