Ingredients
– 2 medium potatoes
– 2 carrots
– 1/2 head of cauliflower
– 1/2 cup green beans
– 2 tablespoons sesame oil
– 2 cloves garlic (minced)
– 2 tablespoons freshly grated ginger or
– 1/4 cup peanut or almond butter
– 1/4 cup tamarind or lime juice
– 2 tablespoons soy sauce
– Salt and pepper to taste
– 1/4 cup coconut milk
– Optional: 1 fresh hot chili pepper (diced)
Instructions
1. Cook the potatoes, carrots, cauliflower, and green beans until slightly tender, about 8 minutes.
2. Heat the sesame oil in a saucepan over medium heat and add the minced garlic and ginger. Sauté until fragrant, about 1 minute.
3. Add the peanut or almond butter, tamarind or lime juice, and soy sauce. Stir until combined.
4. Taste and adjust seasoning with salt and pepper.
5. Add the vegetables to the saucepan and cook for 2-3 minutes.
6. Add the coconut milk and cook for another 1-2 minutes.
7. Serve hot with optional diced chili pepper.
