Ingredients
• 1 lb skinless boneless chicken breast, cut into 1-inch cubes
• 1/2 cup coconut milk
• 1 teaspoon curry powder
• 1 teaspoon ground ginger
• 1 teaspoon ground turmeric
• 2 cloves garlic, minced
• 1 tablespoon brown sugar
• 1 tablespoon soy sauce
• 2 tablespoons vegetable oil
• Salt to taste
• 4 wooden skewers
Instructions
1. In a medium-sized bowl, combine the coconut milk, curry powder, ground ginger, turmeric, garlic, brown sugar, soy sauce and vegetable oil. Stir until all the ingredients are completely mixed.
2. Add the cubed chicken to the bowl and stir until the chicken cubes are evenly coated in the marinade.
3. Cover the bowl and place it in the refrigerator for at least 1 hour.
4. After the marinade is done, remove the bowl from the refrigerator and cut each chicken cube into 2 skewers. Thread the chicken onto the wooden skewers, making sure to evenly distribute the chicken.
5. Heat a large skillet over medium-high heat and add a drizzle of vegetable oil. Once the oil is hot, add the skewers and cook until the chicken is golden brown and cooked through (about 5-7 minutes).
6. Serve the satays with your favorite dipping sauce and enjoy!
