Ingredients:
1. 6 boneless, skinless chicken thighs
2. 1/2 cup low sodium soy sauce
3. 1/4 cup white vinegar
4. 2 tablespoons brown sugar
5. 3 garlic cloves, minced
6. 1 teaspoon cracked black pepper
7. 1/2 teaspoon dried oregano
8. 2 bay leaves
Directions:
1. In a large skillet over medium-high heat, add the chicken and cook for 8-10 minutes, flipping the chicken halfway through.
2. In a small bowl, whisk together the soy sauce, vinegar, brown sugar, garlic, pepper, oregano and bay leaves. Pour the mixture over the chicken and bring to a boil.
3. Reduce heat to medium-low and let simmer for 15 minutes, or until the sauce thickens.
4. Serve over jasmine rice and enjoy!
