Ingredients:
– 5 lb. mussels
– 2 tablespoons of butter
– 1/4 cup of white wine
– 1/2 small onion, finely chopped
– 3 cloves of garlic, minced
– 1 teaspoon of fresh thyme, chopped
– 2 tablespoons of flat leaf parsley, finely chopped
– Salt & pepper
– French Fries
Instructions:
1. Start by preparing the mussels – scrub each mussel with a brush and pull off the beard. Discard any mussels that are already open or cracked.
2. In a large pot, heat the butter over medium heat and add the onions, garlic, thyme, parsley and a pinch of salt and pepper. Cook until the onion softens, then pour in the wine and bring to a simmer.
3. Add the mussels, cover the pot and steam for 5 minutes, until the mussels are open. Discard any mussels that don’t open.
4. Serve the mussels with French Fries and enjoy!
