Instructions:
1. In a medium saucepan, heat some oil and add the prawns. Cook for 2 minutes until slightly pink.
2. Add lemongrass, mushrooms, tomato, and chilies. Cook for 1 minute until the vegetables are fragrant.
3. Pour in the fish stock and bring to a boil.
4. Add fish sauce, lime juice, palm sugar, and fresh coriander leaves.
5. Lower the heat and simmer for 2 minutes. Serve with steamed jasmine rice.
