-2 tablespoons of dark soy sauce
-1/2 teaspoon of white pepper
-2 tablespoons of oil
-2 cups of uncooked jasmine rice
-4 cups of chicken stock

Instructions:

1. Start by combining the ginger, garlic, salt, sesame oil, light soy sauce, dark soy sauce, and white pepper in a bowl and mix them together.

2. Rub this mixture over the whole chicken.

3. Heat the two tablespoons of oil in a pan and place the marinated chicken in. Fry it until the skin is golden and crispy.

4. Meanwhile, rinse the jasmine rice in cold water until the water runs clear.

5. Place the rice into a pot with the chicken stock. Bring it up to a boil, then reduce to a low heat and cover the pot with a lid. Cook it for 12-15 minutes, until the rice is cooked and all the liquid has been absorbed.

6. Next, place the fried chicken into a pot of boiling water and simmer it for 25-30 minutes.

7. Once the chicken is cooked, remove the chicken from the pot and place it into a bowl of cold water to cool it down.

8. Once the chicken has cooled down, shred it into pieces and set it aside.

9. Serve the chicken over the cooked rice with some of the hot broth, cucumber slices, and a sprinkle of chopped scallions. Enjoy!
